Recipe: Watermelon Mint Salad

Salads are always a great, refreshing dish for the summer and this watermelon mint salad is sure keep you cool before heading out on the water.

  • 1 watermelon (about 5 lbs)
  • 1 Vidalia onion
  • 1/4 cup of red wine vinegar
  • Salt and pepper
  • 1/2 cup of extra-virgin olive oil
  • 2 tbs of chopped fresh mint
  • 4 oz of feta cheese, crumbled
  • 6 whole mint sprigs
  1. Cut watermelon into bite-sized pieces (just the inside, not the rind, of course). Remove the seeds as well.
  2. Peel & slice the onion into rings
  3. In a bowl, combine the vinegar, salt, and pepper, then whisk until the salt is dissolved.
  4. Slowly wisk in the EVOO, a little bit at a time.
  5. Add in chopped mint.
  6. Then, in a larger bowl, combine the melon, onion, and feta cheese.
  7. Pour the dressing over the melon+onion+cheese mixture and toss gently until everything is coated and evenly mixed.
  8. Garnish with mint sprigs and serve!
