Recipe: Watermelon Mint Salad
Salads are always a great, refreshing dish for the summer and this watermelon mint salad is sure keep you cool before heading out on the water.
Ingredients:
- 1 watermelon (about 5 lbs)
- 1 Vidalia onion
- 1/4 cup of red wine vinegar
- Salt and pepper
- 1/2 cup of extra-virgin olive oil
- 2 tbs of chopped fresh mint
- 4 oz of feta cheese, crumbled
- 6 whole mint sprigs
Directions:
- Cut watermelon into bite-sized pieces (just the inside, not the rind, of course). Remove the seeds as well.
- Peel & slice the onion into rings
- In a bowl, combine the vinegar, salt, and pepper, then whisk until the salt is dissolved.
- Slowly wisk in the EVOO, a little bit at a time.
- Add in chopped mint.
- Then, in a larger bowl, combine the melon, onion, and feta cheese.
- Pour the dressing over the melon+onion+cheese mixture and toss gently until everything is coated and evenly mixed.
- Garnish with mint sprigs and serve!
